Spinach Pancakes are one of my favorite vegetarian dishes, not only because they are delicious, but they're also really easy to make. This is because I cheat. Shhhhhhhhhh...don't tell anybody.
Costco, of all places, makes utterly mouth-watering frozen spinach pancakes. They are as good as the ones I make from scratch (I will share the scratch recipe too, don't worry). As a student living in the dorms I love the frozen ones as a quick lunch between classes, and they are only 80 calories a piece! An easy, healthy, alternative to cooking a entire meal, and entirely veg folks!
However, if you are in the mood to cook, or want to see how your food is prepared (I don't blame you) I have a recipe for excellent homemade spinach pancakes, this is comfort food at its best.
Spinach Pancakes (this recipe makes 4 delicious pancakes)
4 Tablespoons Flour (PLEASE don't buy bleached flour, it's SO BAD for you!)
2 Eggs (free range please!)
10 Oz. Frozen Spinach (thawed & drained)
Salt & Pepper
1/2 Teaspoon Paprika
2 Tablespoons Olive Oil
Now, for making the pancakes...
1.) Mix the eggs, flour, and spinach together in a bowl. As you mix add the paprika, and salt & pepper to taste
2.) Heat olive oil in skillet
3.) Drop balls of the spinach mixture into the skillet, using a spatula to flatten them into pancakes
4.) Flip as though you are cooking breakfast pancakes until both sides are golden
5.) Allow pancakes to sit on paper towels and drain for several minutes
6.) ENJOY!
